Guinness Poutine

Makes 4 portions

Sauce

½ cup Guinness

1 cup brown Gravy

2 tbsp butter 2 tbsp corn Starch

Salt & pepper to taste

Bring Guinness and gravy to a simmer. Mix corn starch with water and add to simmering sauce while stirring. Simmer 2 min, remove from stove

Add butter to hot sauce and incorporate. Season to taste.

Fries

8oz fries, per person

Sea Salt to taste

1/3 cup Guinness Gravy, per person

2oz package cheese curds

Deep fry fries until crisp and golden brown. Drain and season with sea salt. Place in bowl, pour hot Guinness gravy over the fries and top with the cheddar curds.

Guinness Braised Boneless Short Ribs

Makes 4 portions

Regular bone in short ribs can also be substituted but you will need to double the quantity

2 lbs boneless short ribs

½ tbsp salt & peppers

1tbsp canola oil

1 cup onions, large dice

¼ cup Roma tomatoes

1 tsp garlic, chopped

¾ cup Guinness

2 cups plus 2 tbsp water, divided

2 tbsp beef base

1 tbsp corn starch

1 tbsp flour

Season short ribs with salt and pepper.

Heat oil in a large pot with a flat bottom and sear beef on all sides, remove beef and keep warm.Add onions, garlic and tomatoes and sweat for 1 minute, add Guinness and bring to a simmer.

Add beef base and 2 cups water to above. Add beef to above pan, bring to a boil, cover with tin foil, place in oven at 325F for 2-2 ½ hours or until meat is tender. Remove beef from sauce.

In a small stainless steel bowl, using a whisk, mix corn starch and flour with remaning water, place pan on stove bring to a simmer and add mixture slowly while whisking. Simmer for 5 minutes. Strain sauce through a fine hole strainer.

The short ribs can be served as is with the sauce or they can be cut up and used as a topping for Yorkshire pudding, pasta, poutine, etc.

Yorkshire Puddings with Guinness Braised Boneless Short Ribs

The Yorkshire puddings can be bought ready to heat in better grocery stores.

12 pieces mini Yorkshire puddings*

1 cup Guinness short ribs, shredded

¾ cup Guinness sauce from short ribs

¾ cup aged white cheddar cheese

Heat Yorkshire puddings in 350F oven for 5 mins, or until heated through.

Heat shredded short ribs with the Guinness gravy.

Remove Yorkshire puddings from oven and fill with the hot short ribs.

Sprinkle with the cheddar cheese and place in the oven just long enough to melt the cheese.

Serve immediately with a pint of Guinness!

Smooth, Dark and Handsome Cocktail

10 oz Guinness

1 oz triple espresso infused vodka

1/4 oz blackberry cordial

Add the triple vodka and the blackberry cordial to a glass and pour Guinness over top.

Labor Day Drink Recipe
1.5 oz of limoncello
Club Soda

Add ice and limoncello in a tall glass and fill the rest of the glass with club soda.

Labor Day Tequila Sunrise Drink Recipe
1/2 lime
1 1/2 oz tequila
1 teaspoon grenadine
1/3 teaspoon creme de cassis

Fill a glass with ice and squeeze lime inside. Add the rest of the ingredients and stir. Fill up the rest of the glass with soda water. Throw the remaining part of the lime in the drink. Enjoy.

Labor Day Long Island Iced Tea Drink Recipe
1/2 shot vodka
1/2 shot white rum
1/2 shot triple sec
1/2 shot gin
3 count sweet & sour mix
3 count cola

Fill collins glass with 3/4 full with ice. Add vodka, rum, triple sec, gin and sweet and sour into a cocktail tin. Shake and pour into glass. Add cola.

Labor Day Mojito Drink Recipe
1 1/2oz. Light Rum
1 oz. Lime Juice
1 tsp. Super Fine Sugar
3-4 Mint Leaves
Club Soda

Combine lime juice, mint and sugar in a Collins or highball glass.
Stir gently to bruise the mint.
Fill glass 3/4 with ice.
Add the rum.
Top with soda. Stir well.

Labor Day Pina Colada Drink Recipe
1 1/2oz. Light Rum
2 oz. Pineapple Juice
1 oz. Cream of Coconut
1/2 Banana
1/2 cup crushed ice

Combine all ingredients in an electric blender with the ice. Blend 20 – 30 seconds. Pour blended mixture into a Collins glass. Garnish with a pineapple wedge and paper umbrella (of course!)

Seven and Seven Drink Recipe
1 1/2 oz Seagram’s 7® Whiskey
4 1/2 oz Seven-Up® or Sprite

Independence Day Punch Drink Recipe
26 oz Rye
2 Bottles sherry
3 Bottles ginger ale
2 Whole oranges — sliced

Pour 2 bottles of the ginger ale into a bundt pan and add some of the orange slices. Freeze and use as ice ring as it doesn’t dilute the punch when it melts.

Punch does become smoother as the ring melts. Put orange slices in the punch bowl and add other ingredients. (You may wish to have one more bottle of ginger ale to make the ice ring.)

Star Spangled Jello Shooters
4 c Package Jello (any flavor)
2 c Boiling water
2 c Liquor – any type. (Bacardi always a good choice, or Vodka)

Any flavor.
Dissolve the Jello in the boiling water and let it cool.

Add the liquor. Pour about 1/8 to 1/4 cup into little paper cups and chill.

Squeeze the whole cupful into your mouth–no spoons
or partial servings!

Vodka is the usual first choice, but rum is really good too.

4th of July Holiday Punch
6 c Orange juice
20 oz Frozen strawberries in syrup
2 c Cranberry juice cocktail
3 c Ginger ale

Blend together the orange juice, strawberries, and cranberry juice cocktail.
Add ginger ale immediately before serving drinks.
Makes 18 servings.

Add some Bacardi rum to spice it up a bit!

July Passion Drink Recipe
1 oz Strawberry Liqueur
1 oz Pineapple Juice
1 oz Passion-fruit Juice

Put some fresh peach slices into wineglasses and add some chilled peach nectar to cover. Top with well-chilled sparkling rosé wine, prosecco, or Champagne. Add a drop of grenadine syrup to each drink.

Pineapple Cooler Drink Recipe
1 large (about 4 pounds) fresh pineapple
1 1/4 cup(s) sugar
11 sprig(s) fresh lavender, rosemary, or lemon verbena
1/4 cup(s) fresh lemon juice

1. Cut the peel from the pineapple, remove the core, and cut the fruit into 1-inch pieces.
2. Place the fruit in a food processor fitted with a metal blade and pulse until the pineapple is crushed but not pureed. Transfer to a large nonreactive pot, add the sugar, 4 cups water, and 3 herb sprigs.
3. Bring to a simmer over medium-high heat. Reduce heat to medium-low and cook for 15 minutes. Strain the mixture through a fine mesh sieve.
4. Gently press the solids to extract the juice. Cool and stir in the lemon juice. Serve over ice garnished with the remaining herb sprigs.

10 mint leaves

2 cups cubed ice
1 sugar cane swizzle stick, garnish
1 lime wedge, garnish
1 mint sprig, garnish

Place sugar cubes, mint leaves, lime juice and sweetened dried cranberries in large tumbler and crush. Combine ingredients in glass using a muddling stick or spoon, until sweetened dried cranberries and mint are minced and sugar is dissolved. Add cranberry juice and ice and mix well. Pour into a tall glass, garnish with lime wedge, and enjoy!

Strawberry Margarita Drink Recipe
4 oz frozen sliced California Strawberries in syrup, partially thawed
1.5 ounces tequila
1 oz lime juice or sweet and sour mix
.5 ounce triple sec
1 scoop ice
Whole fresh California Strawberry
Lime slice

In a blender combine all ingredients except whole strawberry and lime slice. Blend until smooth, and pour into stemmed glass rimmed with salt and sugar around rim. Garnish with whole strawberry and lime slice and enjoy this refreshing cocktail on a hot day like cinco de mayo!

1 cup fresh or frozen blackberries (if frozen, thaw)
.25 cup tequila
2 tablespoons orange liqueur
.25 cup lime juice
2 cups crushed ice
Lime or orange juice

Blend berries and juice in blender, and add remaining ingredients and blend until ice is almost smooth.
Moisten rim of 2 (12-ounce) glasses with lime or orange juice and dip in sugar, then pour blended mixture into prepared glasses and serve.

Summer Sangria Drink Recipe
1 Bottle of red wine (Cabernet Sauvignon, Merlot, Rioja reds, Zinfandel, Shiraz)
3 cups grapefruit juice, chilled
1.5 cups white grape juice, chilled
1 cup strawberries, hulled and sliced
1 orange, peeled and thinly sliced (see note)
1.5 cups club soda, chilled

1 splash Grenadine
2 1/2 oz. Lemon-lime Soda (Squirt)
2 slices Lime

In a Highball glass

Pour in Cognac first, then squeeze the two lime slices in the glass, and pour in the Squirt. Then put a splash of grenadine on top.

K.O. Drink Recipe
1 2/3 oz. Vodka, lemon
1 splash Grenadine
2 oz. Pineapple Juice
2 tbsp. (fresh) Lemon Juice
1 pinch Cinnamon
2 scoops Sugar, powdered

In an Old Fashioned Glass, shake all ingredients except grenadine in a cocktail shaker with ice. Strain into an old fashion glass and splash the grenadine on top.

1 Bottle of red wine (Cabernet Sauvignon, Merlot, Rioja reds, Zinfandel, Shiraz)
3 cups grapefruit juice, chilled
1.5 cups white grape juice, chilled
1 cup strawberries, hulled and sliced
1 orange, peeled and thinly sliced (see note)
1.5 cups club soda, chilled

Greentini Drink Recipe (Think Greentini)
2 oz 360 vodka
1.5 oz melon liqueur

Shake with ice and strain into a martini glass and garnish with a lime wedge

2 oz Vodka Organic (Square One)

Planetary Punch Drink Recipe
1.25 oz 360 vodka
.75 oz melon liqueur
.5 oz peach purée (if you can’t get peach purée, substitute a top-quality daiquiri mix)
1 oz orange juice
1 oz pineapple juice

Shake all ingredients together with ice and strain into a chilled martini glass. Then drop a maraschino cherry in the bottom for the “planet”.

Royal Gala Apples
1oz Honey
2oz Single Malt Whiskey
2oz soda water

Combine mashed Canadian Apples (Royal Gala Apples), Honey, Whiskey and soda water. Shake all ingredients together and serve in a rocks glass as a shooter or small sipper.

1.5 oz Square One Organic Vodka
.25 oz Maker’s Mark bourbon
.25 oz Aperol
.25 oz organic fresh squeezed tangerine or mandarin juice
Touch of organic agave nectar if needed

Organic margarita Drink Recipe
2 oz. 4 Copas Blanco Tequila
1.5 oz organic lime juice
1 oz 4 Copas organic agave nectar
Splash of club soda

Shake all ingredients in a shaker with ice. Then strain into a double old-fashioned glass, fill with ice and garnish with a slice of lime.
(If you can’t find the 4 Copas brand agave nectar, try to find another organic brand, but you may want to dilute it half with water)

Yellow Bird Drink Recipe (similar to a Screwdriver)
Juice of half a lime
1.25oz orange juice
1 oz light rum
1 oz dark rum
.25 oz Galliano
Maraschino cherry

Squeeze the lime juice into a shaker with ice, add all of the remaining ingredients and Shake well. Strain into a collins glass with crushed ice and garnish with the cherry.

The Easter Bunny Drink Recipe
1 1/2 oz. dark creme de cacao
1/2 oz. vodka
1 tsp chocolate syrup
1 tsp cherry brandy

Pour the creme de cacao and vodka into a cocktail shaker with ice. Strain into an old fashioned glass with ice cubes. Float chocolate syrup and brandy on top.

The Jelly Bean Shot Recipe
1/2 oz blackberry brandy or grenadine
1/2 oz Southern Comfort
1/2 oz annisette or sambuca

Pour brandy/grenadine into a shot glass. Float anisette or samuca on first level. Float Southern Comfort on second level.

Shamrock Shaker Drink Reecipe

Irish Cow Drink Recipe
2 oz Irish Whisky
8 oz Hot milk
Dash sugar

Pour milk into a coffee mug and add the whisky and sugar, stir well and enjoy!!

Irish Flag Drink Recipe
1 oz Brandy
1 oz Green Crème de Menthe
1 oz Bailey’s Irish Crème

Pour the crème de menthe into a pousse café glass or a cordial glass, and place a teaspoon on the top of the glass and pour the bailey’s Irish crème slowly over the back of the spoon so that it floats on top of the crème de menthe and then pour the brandy slowly over the back of the spoon so that it floats on top of the Bailey’s Irish crème.

Irish Martini Drink Recipe
2 oz vodka
1/2 oz dry vermouth
1/2 oz Irish whiskey
lemon twist for garnish

Pour the Irish whiskey into a chilled cocktail glass and swirl around the glass in order to coat the inside. Then drain the excess whiskey. Pour the vodka and dry vermouth into a cocktail shaker half-filled with ice and shake well, then strain into the cocktail glass. Garnish with the lemon twist and Enjoy!!
